    Baked beans- Friend or foe?
Baked beans have a mixed reputation. They are a great source of protein and fibre but they have suffered a bad reputation due to their high salt and sugar content. We've used reduced salt and sugar beans as they are a great way of keeping you full through the morning.

    Shopping list for 4 5 egg omelette made with mushrooms and peppers 1 tin of reduced baked beans
4 German Bratwurst sausages
onions
20g olive oil
  • Method
    
1. Put the Bratwurst sausages under the grill and prepare the beans for the microwave
1.Fry the mushrooms in the oil.
2. Whisk up the eggs and incorporate some chopped peppers into the egg mixture.
3. Add the egg mixture to the mushrooms and leave for the omelette to cook. 4. Turn the Bratwursts under the grill.
5. When the Bratwursts are done,Grill the top side of the omelette.
6. Take the omelette out of the pan and fry the onions to go with Bratwurst. Add a little dijon mustard if you like.
  • Time Saving Trick
    In all honesty most people don't have time to cook this breakfast in one go before they go to work. This is how we did it - One day 1, we made a 10 egg omelette and divided it into 8. We served 1 piece with a tin of mackerel in tomato sauce and had an orange to go with it. On day 2 we just cooked the sausages and microwaved the beans and the omelette for 2 minutes.
The sausages came in packs of 6 so we cooked all of them at once. We then save some in the fridge/freezer for another breakfast.
