DIY meat and vegetable frittata

    Chorizo, Sausage and processed meats This recipe suggests bacon and/or chorizo. If you are looking for a healthier option, it would be good to choose one of the other protein alternatives suggested.
These meats are often high in salt. They are high in the bad fats and eating too much processed or smoked foods has been associated with cardiovascular disease, cancer and early deaths. It may be good to limit how much of foods you eat and swap from smoked to unsmoked foods.
  • Shopping List
    Shopping list for 3 2 large potatoes
2 red onions
2 tbsp of oil
handful of diced vegetables like courgettes, peas, peppers, spinach, sweetcorn
handful of meat like bacon, chorizo, ham, shredded chicken
8 eggs
100g grated cheese
Salad to serve.
  • Method
    
1.Dice and boil 2 large potatoes until just tender.
2. Slice the onions and fry in the oil until soft.
3. Add the vegetables and meat and the potatoes and cook for 2 minutes.
4. Beat the eggs with seasoning and mix into the pan of ingredients, lower the heat.
5. Cook unti the top has almost set.
6.Sprinkle over the cheese and put under the grill to finish the omelette and melt the cheese.
7.Serve with salad.
