Mediterranean mackerel caponata

    Using ready meals to eat healthily - takes only minutes. It's great when you find a ready meal that is healthy but most of the time they are not the healthiest choice. When using ready meals ask yourself these questions.
1. Is there enough protein and fibre in it?
2. Has it got sugar or white flour in it? if so, how much?
3. How much salt is in it? Remember the GDA is 6g a day.

  • Method
     1.Microwave the caponata for the minutes that it states on the packet.
2. Share the caponata between 2 and serve with a fillet of peppered mackerel.
