Sticky roasted sausages with puy lentils and roasted veg.

    Lentils - Slow Carbs Lentils are rich in protein and fibre and low in fat. They are also low GI. The glycemic index or GI is a ranking of carbohydrate rich foods. Foods that have a high GI score can cause a quick rise in blood glucose. Foods that are lower GI, sometimes called slow or resistant carbs are better foods as they do not encourage peaks in insulin levels and encourage healthy gut bacteria, which may help prevent heart disease

    Serves 4
2 red onions
8 sausages
2 x 250g pouches of ready to eat puy lentils
1 tbsp of honey
1 tbsp of wholegrain mustard
40g olive oil
About 350g of aubergines, courgettes, fresh peppers, and cherry tomatoes.
  • Method
    
1. Preheat the oven to 200/180.
2. Cut up the courgettes, peppers and aubergine into chunks. Put into a bowl, add the oil and mix thoroughly so that all the veg is coated.
3. Put the veg in an ovenproof dish and cook for about 45 minutes in total. Turning the veg over about half way through.
4.Arrange the red onions into wedges in a baking dish and put the sausages amongst them. Cook for about 25 minutes, turning about half way through.
5.About 15 minutes from the end, add the cherry tomatoes to the roasted veg mix and give everything a stir.
6.After the sausages have been cooking for about 25 mins, mix the lentils with the honey and mustard and then put this mixture in with the sausages and onions. Mix thoroughly, ensuring the sausages are sitting on top of the lentils. Cook for about another 15 -20 minutes until the lentils are warmed and the sausages are cooked.
7. Serve
